Curried Turkey Salad
You can save your grocery dollars and extend this Curried Turkey Salad to serve 6 people instead of 4. Just add 1 cup cooked elbow macaroni along with the apple and celery in step 2.
1/3 cup reduced-fat mayonnaise
3 Tbsp reduced-fat sour cream
1 tsp curry powder
1/2 cup chopped celery
1 small red or green apple, chopped
1 tsp lemon juice
1 tsp minced chives
1/4 tsp pepper
3 cup cubed cooked turkey breast
4 lettuce leaves
Combine mayonnaise, sour cream and curry powder in a large bowl; mix well.
Add celery, apple and lemon juice to bowl; stir well.
Add chives, pepper and turkey to bowl; stir well.
Spoon turkey mixture onto lettuce-lined salad plates.
Curried Turkey Salad tip: If you are in a hurry, purchase a roasted chicken from the supermarket instead of cooking a turkey breast.
